Rob Roy Tuna and Kidney Beans


Tip: Tuna and beans is a classic Italian combination. 

For 2 servings you will need:

  • 2 x 95g tins of Rob Roy Tuna Chunks in Brine
  • 1 x 400g can of kidney beans, drained
  • small red onion, sliced
  • 1 clove of garlic, crushed

For the Dressing:

  • 1 tsp strong Irish or English mustard
  • 1 tbsp wine vinegar
  • 2 tbsp extra virgin olive oil
  • sea salt and freshly ground pepper

To Finish:

  • Parsley

Directions:

  1. To make the dressing, put mustard, vinegar, oil, salt and vinegar, in a jam jar and shake vigorously.  Transfer to a bowl and add the drained beans and onions. Toss gently.
  2. Now drain the tuna, separate into large chunks and add to the bowl. Gently coat with the dressing, sprinkle with parsley and serve.
