Penne Pasta with Rob Roy Sardines and Raw Tomato Sauce and Capers


Tip: Apart from boiling the pasta, there is no cooking involved in this super easy and very tasty recipe.

For 2 servings you will need:

  • 175g penne pasta (preferably wholewheat)
  • 1 can of Rob Roy Sardines
  • 1 can of chopped tomatoes
  • 2 tbsp extra virgin olive oil
  • 2 cloves of garlic, crushed
  • 1 tsp capers, chopped
  • sea salt and freshly milled pepper
  • parsley

Directions:

  1. Start by making the sauce:
    Pour the chopped tomatoes into a sieve, shake a little until most of the juice has passed through and you’re left with coarsely chopped tomato flesh.  Put this into a bowl together with the olive oil, crushed garlic, capers, salt and pepper.  Stir and allow to marinate. 
  2. Put the pasta on to boil in plenty of salted water and when cooked, drain. 
  3. Drain the sardines, break gently into pieces and carefully stir into the tomato sauce. 
  4. Pour over the pasta and serve, sprinkled with parsley.
