Penne Pasta with Rob Roy Sardines and Raw Tomato Sauce and Capers
Tip: Apart from boiling the pasta, there is no cooking involved in this super easy and very tasty recipe.
For 2 servings you will need:
- 175g penne pasta (preferably wholewheat)
- 1 can of Rob Roy Sardines
- 1 can of chopped tomatoes
- 2 tbsp extra virgin olive oil
- 2 cloves of garlic, crushed
- 1 tsp capers, chopped
- sea salt and freshly milled pepper
- parsley
Directions:
- Start by making the sauce:
Pour the chopped tomatoes into a sieve, shake a little until most of the juice has passed through and you’re left with coarsely chopped tomato flesh. Put this into a bowl together with the olive oil, crushed garlic, capers, salt and pepper. Stir and allow to marinate.
- Put the pasta on to boil in plenty of salted water and when cooked, drain.
- Drain the sardines, break gently into pieces and carefully stir into the tomato sauce.
- Pour over the pasta and serve, sprinkled with parsley.
