Stir-fried prawns with noodles, bok choy and chillies
For 2 servings you will need:
100g rice (or egg) noodles
1 tbsp peanut oil
1 large red chilli chopped
small piece of fresh ginger, shredded
2 cloves of garlic, sliced
1-2 spring onions
handful of button mushrooms
2 shredded bok choy
1 x 270g Rob Roy King Prawns in brine, drained
1 tbsp light soy sauce
1 tbsp sweet chilli sauce (optional)
- Cook the noodles according to packet instructions, drain and set aside.
- In a large saucepan or wok, heat the oil and quickly fry the chilli, ginger and garlic for 30 seconds. Add the mushrooms, shredded bok choy, prawns and noodles and stir-fry for 3 minutes.
- Season with a little light soy sauce (and sweet chilli sauce if liked).
