Tip: Tuna and beans is a classic Italian combination.
For 2 servings you will need:
- 2 x 95g tins of Rob Roy Tuna Chunks in Brine
- 1 x 400g can of kidney beans, drained
- small red onion, sliced
- 1 clove of garlic, crushed
For the Dressing:
- 1 tsp strong Irish or English mustard
- 1 tbsp wine vinegar
- 2 tbsp extra virgin olive oil
- sea salt and freshly ground pepper
To Finish:
Directions:
- To make the dressing, put mustard, vinegar, oil, salt and vinegar, in a jam jar and shake vigorously. Transfer to a bowl and add the drained beans and onions. Toss gently.
- Now drain the tuna, separate into large chunks and add to the bowl. Gently coat with the dressing, sprinkle with parsley and serve.
