Tip: Serve with a tomato salad on the side or top with alfalfa sprouts.
For 2 servings you will need:
- 1 tin of Rob Roy Sardines in oil
- 150g low fat cottage cheese
- 1 tsp creamed horseradish
- lemon juice to taste
- sea salt and freshly milled pepper
- sprig of tarragon
Directions:
- Put the sardines, cottage cheese and horseradish in a food processor and whiz until it resembles a pate.
- Season to taste with lemon juice, salt and pepper.
- Gently stir in some chopped tarragon and serve on toasted wholemeal or sourdough bread, with a tomato salad on the side.
