Stir-fried prawns with noodles, bok choy and chillies

For 2 servings you will need:

  • 100g rice (or egg) noodles
  • 1 tbsp peanut oil
  • 1 large red chilli chopped
  • small piece of fresh ginger, shredded
  • 2 cloves of garlic, sliced
  • 1-2 spring onions
  • handful of button mushrooms
  • 2 shredded bok choy
  • 1 x 270g Rob Roy King Prawns in brine, drained
  • 1 tbsp light soy sauce
  • 1 tbsp sweet chilli sauce (optional)

Directions:

  1. Cook the noodles according to packet instructions, drain and set aside.  
  2. In a large saucepan or wok, heat the oil and quickly fry the chilli, ginger and garlic for 30 seconds.  Add the mushrooms, shredded bok choy, prawns and noodles and stir-fry for 3 minutes. 
  3. Season with a little light soy sauce (and sweet chilli sauce if liked).
